Flufftastic Pancakes
With a crazy rise and a sweet, vanilla taste, these pancakes are just short of heaven.

- 225 grams (1.5 cups) all-purpose flour
- 14 grams (3.5 teaspoons) baking powder
- 6 grams (1 teaspoon) salt
- 38 grams (3 tablespoons) white granulated sugar
- 300ml ml (1.25 cups) milk, lukewarm (cow's milk, almond milk, soymilk all work here, any milk you like)
- 1 large egg
- 43 grams (2 tablespoons) butter, melted plus extra for cooking pancakes in
- 5 ml (1 teaspoon) pure vanilla extract
Whisk together the flour, baking powder, sugar, and salt in a medium or large bowl until thoroughly combined.
I microwave the milk just enough so it's room temperature, for me that's about 30-40 seconds on high. Butter I melt at 25 seconds on high and stir until it's smooth, overheating this will cause the butter to separate.Combine your milk and egg in a small bowl and whisk until incorporated, this will gently raise the egg's temperature so when you add in the butter, it won't clump up. Go ahead and add the butter and vanilla, whisking until this is homogenous. Pour your wet mixture into the dry ingredients, and whisk until it's just combined. Don't overdo it here, we want this a bit lumpy, not all the flour needs to be smoothly incorporated.
Using the largest pan you've got on hand, heat on your stove over medium heat. After it's had a few minutes to warm, throw half a tablespoon of butter in the pan and swirl it around so it covers the surface. Using a 1/4 cup measure, pour dollops of this batter into the pan on that melting butter, trying not to let the butter brown too much. My pan fits 3 pancakes at a time.These fluffy babies are ready to flip with your spatula once they are bubbly on top and dry around the edges. You and lift one up a bit to check the underside, I like mine lightly golden brown. On average mine take about 2 minutes on the first side.The second side takes way less time. I like my pancakes barely done, so after abut 30 seconds on the second side I take them off. Cook these guys to your liking. Add some melted butter (yes, more butter, of course more butter), brown sugar, maple syrup, or berries and cream to the top of your pancakes. I like apple butter on them in the fall.
